Our catering team have developed a new range of dishes which will be rotated weekly throughout autumn and winter. Development chef, Melissa Hudson, led the development and tells us a little bit about the new dishes:
“The new salads offer fresh and seasonal flavours reflecting autumn and winter. The dishes have robust flavours and features roasted salads, perfect for the cold weather, including our roast squash and sweet potato salad with pumpkin seeds, red chilli and honey dressing.
Along with the hearty and robust flavours the dishes also offer a fresh seasonal taste, such as our apple, pear, cucumber and dill salad with a light vinaigrette dressing.
We’ve also incorporated dried fruits and seeds in our fillings offering a fantastic addition to our dishes which feature cranberries, apricots, figs pumpkin and sunflower seeds.”
As well as some customer favourites returning to the menu, new dishes have also been developed, including:
- Brown rice with garlic mushrooms, kale and sour cream
- Broccoli, lentil and feta salad
- Fig, chickpea, black olive and rocket salad
Visit the Salad Box counter in the Food Court and mix and match your salad favourites, from just £3 for a regular salad box. Add a cold or hot deli filling from the deli bar or hot food counter, including chicken and bacon, tuna mayonnaise, pizza, spinach and ricotta plait or our daily hot roast.
