Easy, Feel Good Recipes to Try This Week

In the run up to University Mental Health Day, we’re sharing some of our favourite recipes. Each one has been chosen because its ingredients help support physical wellbeing - simple, nourishing dishes that are easy to make and (bonus!) can be made in batches, so you'll always have something in the fridge for when you'd rather be doing something other than cooking!

Five Bean Chilli

Beans means a healthy dose of protein and fibre - great for steady energy

  • Even better if: add some leafy greens like spinach
  • Keeps for: 3 days in fridge, freezes well
  • Serve on rice, a jacket potato, in wraps as a burrito base, or top up tortilla chips to make nachos

Tuna Pasta Bake

Oily fish are filled with brain boosting nutrients

  • Even better if: use wholegrain pasta
  • Keeps for: 3 days in fridge

Sweet Potato & Spinach Dhal

Spinach is packed with iron and vitamin C - all supporting mood, focus and reducing fatigue

  • Even better if:

  • Serve with: rice, naan or chapatis

This is a classic Beckett Kitchen recipe and was cooked as part of our No Waste We'll Cook event back in 2022, where our team of chefs created two dishes to use up leftovers and long shelf life foods!

Overnight Oats

Oats are rich in fibre, giving steady energy and better focus

  • Even better if: add chia seeds for extra omega 3
  • Make 3 - 4 jars at a time
  • Customise each day with yoghurt, seeds, honey or cinnamon
