At 30p per serving, this recipe brings together seasonal veggies and makes a big batch ready to freeze and reheat whenever you need a winter warmer.

Try freezing in small batches (you should get around 6 good helpings) for a quick dinner after lectures or get creative with different flavours per batch. Spice it up with sriracha or harissa paste or top with crispy bacon or cheese!
